It wouldn’t be a holiday par-tay without sausage balls! You can use venison sausage or Italian sausage for this recipe. The secret to GREAT sausage balls is the size of your scoop. Use a melon baller for consistency. The sausage balls shouldn’t be any larger than 1-inch, otherwise, they’ll be dry, golf ball texture and no one wants to bite into that. My great grandma Elnora passed away when I was 13-years-old. She loved sweet potato biscuits and passed on her love of these fluffy, soft delights to my Grandma Dot, Mom and me! They are delicious eaten with country ham, or spread with softened butter or apple butter. Honey and warm syrup compliment them too. Living on the Georgia coast, I’ve learned more than ever the importance of being prepared when natural disasters strike. In 2016, during Hurricane Matthew, we lost power for about 48 hours with no indication of when it would return. Outside, harsh winds ripped through the neighborhood, uprooting age old oak trees, snapping tall pine trees in half and wreaking havoc. In 2017, we evacuated Savannah during Hurricane Irma, and thankfully came home to minimal damage.
