Light Mexican Casserole Heavy on Flavor

0503162025.jpg
I’ve always considered myself to be a pretty healthy eater, but since I began a weight loss program to get in better shape for summer just over a month ago, I’ve become extra aware of my food choices and the dishes I’m cooking at home. I’m not about deprivation–I love food way too much! However, I’m always on the lookout for recipes that allow me to indulge and enjoy the flavors I know and love without sacrificing taste and my waistline. Old McDonald Fish Camp Seafood Restaurant
North Augusta, South Carolina

For those of us who grew up near Augusta, Georgia, a trip out to Old McDonald Fish Camp is always a treat. My family has enjoyed going for years–we pick up my Grandma on the way, and head out to the country for some grits and hushpuppies, hoping to get there before the waiting room fills up. We usually visit on a Friday or Saturday night, but recently, I realized we’d been doing it all wrong! Thursday night is Crab Leg Night and the only night of the week my favorite crustaceans make an appearance. When it comes to buying and shopping locally, you can bet, I’m a supporter–and not just where food is concerned. That’s why when Brazzlebox reached out to me about helping spread the word on National Small Business Week coming up May 1 – 7, I jumped at the chance. Based in Syracuse, New York, Brazzlebox is a 32,000-member online community network built by and for small and home-based business owners. The national recognition week is set aside each year in the spirit of helping small businesses connect and succeed. A bunch of entrepreneurs helping each other out is definitely a cause I can get behind! Continue reading “Celebrating National Small Business Week with Brazzlebox”

5 Farmers’ Market Recipes to Make Right Now

Rebekah-1
Poor Robin Gardens from Screven, County is one of my favorite vendors to purchase produce from at the Statesboro Mainstreet Farmers’ Market. Meet Ricardo, the farmer!

The return of the Farmers’ Market for me each season is just about as exciting as Christmas Day. With fresh herbs and local produce on my mind, I love getting up on Saturday morning, throwing on my yoga pants, a tank top, a pair of favorite flip flops and my over-sized sunglasses and heading out the door. Sometimes, I even pack up my 11-pound Shih Tzu, Ewok, and we ride with the radio up and the windows down on the way.  Continue reading “5 Farmers’ Market Recipes to Make Right Now”

Create Cooking Challenge Fail

American Public Television, a sponsor of Create TV, recently hosted a cooking competition inviting home cooks and professional chefs to submit a two-minute video demonstrating a favorite cooking tip or recipe. So naturally, I auditioned. Continue reading “Create Cooking Challenge Fail”

Breakfast Just Got Better

Sometimes all it takes to inspire change is trying something new. I went grocery shopping this week and bought some light English muffins. I never buy English muffins, always whole wheat bread or occasionally even small bagels, but never English muffins. That changes now! The spongy, holey dough is truly a vehicle for any topping you can imagine. Crispy when toasted, English muffins have officially breathed life into my breakfast routine. Suddenly I find myself mashing avocado, slicing tomatoes and poaching eggs (trying to poach eggs, I should say. I tried and failed, but hey – the point is, I am inspired to try.)  Continue reading “Breakfast Just Got Better”

Easter Entertaining: Recipes and Recollections

The Lingenfelsers hosted a traditional Easter Sunday dinner for family in Claxton, Georgia.
After church, a traditional Easter Sunday dinner is served at the Lingenfelser home in Claxton, Georgia.

Few things bring me greater joy than entertaining family and friends around my kitchen table. Easter Sunday was such an occasion. I hosted dinner for my parents and sweet in-laws, plus my husband’s beloved Aunt Polly. From Ina Garten’s Coconut Cake to deviled eggs and brown sugar-mustard glazed ham, our celebratory feast was Some Kinda Good, and as Southern and traditional as it gets. Keep Calm and Carry on Cooking: Exciting Video Announcement Reveals My Next Steps

With only a few days before Easter to go, I know I should be writing about ham and sharing egg-cellent (ha!) recipes. The truth is, there’s something else weighing heavy on my mind that I’ve been dying to share with you. Since I started my food blog in 2011, a large part of my inspiration has come from this Julia Child quote: “Find something you’re passionate about and keep tremendously interested in it.” 2016 is the year I take that philosophy to the next level. You can attribute it to 10 years of being in the workforce or the clarity that comes with the decade of turning 30, but no matter how you slice it, experiencing a situation such as When My Job Quit Me, has provided raw perspective.  Continue reading “Keep Calm and Carry on Cooking: Exciting Video Announcement Reveals My Next Steps”

Say Cheers with Irish Mojitos

I’ve got a refreshing cocktail for y’all just in time to say cheers on St. Patrick’s Day: an Irish Mojito! Bright and a little on the dangerous side (because you can’t taste the alcohol), the Creme De Menthe gives this cocktail a minty flavor and a festive pop of green color. It’s fruity and just the kind of thing I love to sip on while watching the parade go by in the 80 degree Savannah, Georgia “spring” weather. Continue reading “Say Cheers with Irish Mojitos”
